
Coconut Oil
Once, before hurracaine Joan, nearly thirty years ago, both Big Corn Island and Little Corn Islands’ main industry was
the harvesting and processing of Coconut Oil.
It is said that the islands produced nearly a million coconuts per month, but the same hurracaine completely leveled the
two islands, totally destroying the trees, the two presses and
the entire Coconut industry in general. It was afterwards
that the people focused the greater part of their energies to
the harvesting of lobster as a commercial source of money.
There are different processes on making the oil.
First the coconuts are gathered each day, husked (the outer fibrous material is removed), and the outer shell that
protecting the interior meat is removed. After the coconut
meat is dried in the oven or in the sun, if the days are
sufficiently dry and hot.When the coconuts has lost all its
water content and only the oil remains in the coconut, it is
call “copra”. The coconut gets translucid color instead of
the white.
The “copra” is first milled in to small pieces and then pressed
into the machine press which then squeezes the oil our from
the coconut using tremendous pressure. The oil flows out like water, pure and natural. Is is collected in bottles and it is
fresh as it can be.
It is also another natural and more rustic way to extract the oil from the coconuts and without a press, it is the most used
on the islands after the big wind passed by and until the
present moment. After gathering the coconuts, husk them
and mill the coconut meat as fine as possible. After extract
the milk from the fine grated coconut meat, working with
the hands and milking away in big drums using nets to strain
the milk.
Build a big fire with all the husks left overs from the
coconuts.
Heat that milk until the water evaporates and the oil
separates and remains nice and clear. It have to be enough
cooked to have evaporated all that water and the and making sure does not cooks too much and burns the good
properties. This is always the most challenging part of the
coconut oil maker. To get a nice smelling and clear oil that
last long on the shelf and keeps the nice properties fresh for
longer time.
Both ways to get the coconut oil from our coconuts have medicinal properties It is good for the skin and the hair, keep
away biting sand flies and as an all purposes cooking oil to
add a exotic Caribbean taste to all your favorite food dishes.
When used used in soaps, Coconut oil makes a soap have a very nice and smooth fine foam, it is said the coconut soaps
are very foamy even in salt water!
This is an non hydrogenated, natural coconut good for both body and spirit.
